Chef Carlos is filled with knowledge and love for Peruvian cuisine having been born in Peru himself. 

His heritage and over 13 years of experience throughout many great restaurants in Miami under his belt, can be appreciated through the flavor and presentation in each of his plates.  

He takes great pride in using fresh ingredients and showcasing the delicious adventure that Nikkei cuisine takes you through.
